New cookbook, 'Our Favorite Recipes,' just arrived; also offers handy hints

While there's no doubt it's a recipe book extraordinaire, the new Cullowhee Baptist Church cookbook is also a uniquely handy reference book.

Ever wonder why your biscuits are dry? Perhaps you handled them too much or baked them in too slow an oven, the book says. Want perfectly sliced strawberries? Use your egg slicer. Need to ripen kiwi's? Place them in a brown paper bag with a banana or apple and leave at room temperature.

If you are using nuts in a cake recipe, shake them with flour first and they won't sink to the bottom. If they are stale, heat them in the oven at 250 degrees for 10 minutes. Perk up soggy lettuce by adding lemon juice to a bowl of cold water and soak for an hour in the refrigerator.
For fast, easy cleanup of food stuck inside pans, boil a little vinegar and water in the pan before washing. No scrubbing required­ the pan practically wipes clean.

Cullowhee Baptist Church's new cookbook, "Our Favorite Recipes," is full of hints like these and even has a section called "99 Ways You Can Save the Earth."

With peaches in season, try this quick peach pie recipe from Harriet Parker.

2 baked pie crusts
3 tsp. cornstarch
1 cup sugar
1 cup water
1 package peach Jell-o
1 8-ounce package cream cheese, room temperature
4 to 5 peaches, peeled and sliced

Mix cornstarch, sugar and water and bring to boil, almost. Add one package peach Jell-o; mix and cool. Cover bottom of crust with softened cream cheese. Place peaches on cheese. Pour cooled mix over peaches. Let set. Serve with Cool Whip.
