If you are looking for a new dessert to try over the holidays this layered treat may be just the one!
1 1/2 cups boiling water
1 package (8 oz.) Jell-O orange flavored gelatin
1 cup cold water
1 can (20 ounces) crushed pineapple in juice - do not drain
1 can (11 ounces) mandarin orange segments, drained
1 1/2 cups graham cracker crumbs
1/2 cup sugar, divided
1/2 cup (1 stick) butter or margarine, melted
1 package (8 ounces) cream cheese, softened
2 tablespoons milk
1 tub (8 ounces) whipped topping, thawed
Stir boiling water into gelatin in large bowl at least 2 minutes, until completely dissolved. Stir in cold water, pineapple with juice and oranges. Refrigerate about 1 1/4 hours or until slightly thickened (consistency of beaten egg whites). Mix crumbs, 1/4 of the sugar and melted butter in 13" x 9" pan. Press firmly onto bottom of pan. Refrigerate until ready to fill. Beat cream cheese, remaining 1/4 cup sugar and milk in large bowl until smooth. Gently stir in 2 cups of the whipped topping. Spread evenly over crust. Spoon gelatin over cream cheese layer. Refrigerate 3 hours or until firm. Garnish with remaining whipped topping.
Makes 15 servings. Refrigerating time: 4 1/2 hours.
