This appetizer is so easy to make you’ll wish you made more! Add chopped tomatoes, cilantro, green chile peppers, or lime juice for a different flavor all together. Delicious!

1 can black beans

1 can shoe peg corn

1 green bell pepper, chopped

1 medium red onion, chopped

1 container Feta cheese

Dressing

1/2 cup olive oil

1/2 cup vinegar

1/2 cup sugar

Mix together dressing ingredients in small sauce pan and bring to a boil. Set aside to cool. Mix vegetables together. Add dressing to vegetables and refrigerate overnight. Sprinkle feta cheese over mixture just before serving.
