Make this recipe healthier with low sodium bacon and no-salt-added diced tomatoes. So flavorful and delicious!
3-5 strips thick-sliced bacon, diced
1 cup diced onions
1 tablespoon minced fresh garlic
1 1/2 pounds fresh green beans, trimmed
1 can (14.5 ounce) diced tomatoes in juice
1/2 cup water
Salt and black pepper to taste
Cook bacon in a large saucepan until crisp; transfer to a paper towel-lined plate. Heat drippings over medium-high heat. Add onions and cook until softened and brown, 3-5 minutes. Stir in garlic; cook until fragrant, about 1 minute. Stir in green beans, tomatoes, water, and bacon; season with salt and pepper. Cover and simmer beans over medium-low heat until very tender, 45 minutes, stirring occasionally and seasoning with more salt and pepper as desired.
Makes 5 servings (6 cups). Total time: 1 hour.
