Summertime is the perfect time for this tangy citrus rice dish. This recipe can easily be doubled for a potluck dinner or any large crowd.
1 cup brown and wild rice (May use all brown rice.)
1/2 cup dried cranberries
3/4 cup pecans - toasted and chopped
2 stalk(s) green onion, finely sliced
2 tablespoons apple cider vinegar
2 tablespoons olive oil, extra virgin
2 tablespoons honey
2 tablespoons fresh orange juice
3/4 teaspoon orange zest
fresh cracked pepper (to taste)
pinch of salt
Cook rice as per directions and cool in fridge. Combine liquid and pour over rice. Add rest of ingredients and chill.
