Start your mornings off with this easy recipe muffin tin breakfast. Make ahead of time when you want to enjoy visiting with family or friends and not stuck in the kitchen. Just let the oven do the work for you!

Ingredients - enough for each muffin tin

Fresh bread slices

Eggs

Bacon

Diced tomatoes

Chopped green onion tops

Cheddar cheese

Salt and pepper

Hot sauce - optional

Spray each muffin well with nonstick spray. Press a piece of soft fresh sandwich bread in each well to form a cup. Take one half or one slice of bacon, depending on the size of your muffin cups, and wrap bacon around top crust area of bread. Place about a teaspoon of diced tomatoes in the bottom of muffin well. (Option: you can also add Green onion tops). Sprinkle some shredded cheddar cheese on top of the tomatoes. Break one egg into each well. Season with salt and pepper on top of each egg. Could also add a dash of hot sauce if you like. Bake at 350° for about 20 minutes or until the yolks are as firm as you desire and the whites are cooked through. Bon appétit!
