These scones are flaky and delicious and get their citrus flavor from not only from orange juice but orange zest as well. Perfect for a brunch with family and friends.
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/3 cup sugar
3 tablespoons chilled stick margarine, cut into small pieces
1 (8 ounce) carton lemon low-fat yogurt
2 teaspoons grated orange rind
1/4 cup unsweetened orange juice
Vegetable cooking spray
1 tablespoon sugar
Combine first 5 ingredients in a bowl; cut in margarine with a pastry blender until mixture resembles coarse meal. Combine yogurt, orange rind, and orange juice; add to dry ingredients, stirring just until dry ingredients are moistened. Dough will be sticky. With floured hands, pat dough into a 9-inch circle on a baking sheet coated with cooking spray. Cut into 10 wedges, cutting to, but not through, bottom of dough. Sprinkle with 1 tablespoon sugar. Bake at 400 degrees for 16 minutes or until golden. Yield: 10 scones.
