It's hard to believe there are only five ingredients in these wonderful little muffins! So simple, easy, and yummy. Recipe makes 8 large muffins or 16 mini muffins
1 cup packed light brown sugar
1/2 cup all-purpose flour
2 cups chopped pecans
2/3 cup butter, softened
2 eggs - beaten
Preheat oven to 350 degrees. Grease muffin tins generously. In a medium bowl - stir together brown sugar, flour and pecans. In a separate bowl, beat the butter and eggs together -- stir in the dry ingredients until combined. Spoon batter into tins - 2/3 full. Bake for 12-13 minutes in the mini tins / 15-17 minutes in the large tins. Run a knife around the muffin to help pop them out.
