These tasty sweet potato dumplings are the perfect side dish for any meal. Or for something a little different top with vanilla ice cream for a delicious dessert.
1 medium or large sweet potato, cut into pieces about an inch or two
1 or 2 cans Butter-Me-Not Biscuits
1 cup sugar
1 cup brown sugar, packed
1 teaspoon cinnamon
2 1/2 cups water
1 stick butter, melted
Flatten biscuits and place potato piece in the center. Fold biscuit around potato. Place seam side down in baking dish leaving a little space in between each biscuit. Pour melted butter over biscuits. In a sauce pan combine the water, sugar, and cinnamon to a boil and pour over biscuits. Bake at 350 degrees for 45 minutes. Take out of oven after 35 minutes and spoon liquid over the tops of biscuits and return to oven for 10 minutes more.
